Bircher Muesli

This is my current pre-training favourite. Adapted from an Australian Institute of Sport recipe.

  • 2 cups rolled oats
  • 1 cup fresh apple juice
  • 1 1/2 cups skim milk
  • 1 cup low fat vanilla flavoured yoghurt
  • 1 apple, grated
  • 1/2 cup chopped dried apricots
  • 1/3 cup chopped nuts (such as hazelnuts and sliced almonds)
     
  • Honey, apricots and almonds for serving

Combine all ingredients in a bowl. Cover and refrigerate overnight.

Serve drizzled with honey and sprinkled with chopped apricots and almonds.
