Low GI Muesli Bars

These muesli bars are so good! One is never enough.. They do require a fair few ingredients, but they are all re-usable pantry items that will keep for next time.
Dry Ingredients
1 ¼ cups rolled oats
1 cup desiccated coconut
½ cup wheatgerm
¼ cup oat bran
¼ cup sunflower seeds
¼ cup pumpkin seeds
2 tablespoons sesame seeds
¼ cup almonds
¼ cup pecans
Dried Fruits
¼ cup dried peaches
¼ cup dried apricots
¼ cup dates
¼ cup dried cranberries
(these can be adapted depending on your tastes)
Syrup
200g butter
½ cup honey
1 cup low GI sugar
Mix the 'dry ingredients' together in a bowl. Distribute on an oven tray and toast in oven until lightly golden and aromatic.
Pour back into bowl and mix through the dried fruits.
Now to make the syrup to stick it all together. Combine butter, honey and sugar in a saucepan and cook mixture until soft ball stage1 (approximately 12 minutes).
Once at soft ball stage, pour syrup into the dried mixture and stir to combine.
Spoon the mixture into a lined baking tray. For a perfectly flat surface, cover with a sheet of baking paper and press another baking tray on top of it. Set aside to cool.
When cool, cut into slices.
1 Soft ball stage is the point when a drop of boiling syrup dropped into cold water forms a soft rubbery ball which will flatten on its own when removed
